http://www.doomworld.com/xwe

Grab XWE and open the wad with it. I think the program is pretty self explanatory, but if you get stuck then I'll help

Midi2Mus. Though it also works the other way around: Midi2Mus (http://www.geocities.com/the_shinjo2002/MIDI2MUS.zip)

Though I don't know the command line parameters for it, since I run it through Wintex (a program similar to XWE except older): Wintex 5.0 (http://www.geocities.com/the_shinjo2002/wintex50.zip)

You have to edit Wintex.ini (notepad can open it) to point Wintex to midi2mus.exe, but once you've done that Wintex will automatically convert any Doom music lump you extract, into a midi file.

XWE also has support for Midi2Mus, though I haven't tried it myself.

You have to get something to play the midi file, then you record it with a wave recording program like soundforge, then use oggdropxpd to convert the wave to an ogg.
