bind +c "recorddemo 1"
bind +p "pausedemo"
bind +s "stopdemo"
bind +l "playdemo 1"
go into your jDoom.cfg located in c:\doomsday\run\jDoom\ and add this to the key bindings:D
These are toggles to record demos in doomsday, inagme, press "c" to start recording, and if you want to jump about press "p" to pause and unpause, when you've finished press "s" to stop and to watch the demo press "L"
Btw, Mods, if this is in the wrong forum, please move the thread:)

Does the demo get saved as a file? If so, in what directory and how do you load it again?

You load it with "playdemo". These are console commands so you can type them in the console. The actual demos are saved in your doomsday directory under the subdirectory demo. (If you want to benchmark use "timedemo" instead)
PS Did you notice the post date of the OP ?
