I have Doom and Final doom for the playstation (I have a ps2) and would like to make my own levels (or edit existing ones). Is there any way to do this?

Hmm. I am not sure really. Why don't you just get Doom for the PC or Mac and make some levels /wads/stuff.
You can get the entire doom pack, Doom, Doom 2, Ultimate Doom, and Final Doom @ wal-mart for 10.00. Pretty sweet deal.
Then grab Doom Builder, DeepSea or WinDEU and have fun.

maybe if you downloaded an emulator and the game rom. maybe you could hex edit it. or some mumbo jumbo like that.
but the answer is basically no

I don't think the actual doom game for playstation will allow for loading in PWADs. Even if they were in the proper format and stored on a memory card for example.
But hey, if you got anything above a Pentium I then you can easily create and run levels for the doom games. And like I said, you can get every single classic doom game all on one cd from Wal-Mart for 10 dollars... so go for it.

Yeah, then if you really really liked the PS version of Doom you can download that and play it on your computer too! (You have to have the original Doom for computer though).

You can't edit PSXdoom. PsxDoom uses a new wad format that is completly different than that of its pc counterpart.
And then you got the setup stuff on the cd, and stuff like that...its 100% impossible to edit the contents.

The impossibility of Editing the PSX doom Wads now has the official support of the Doom community. Heh.
