I'm actually running Jdoom, and i'm very happy to frying some demon's butts...
But,
So:
WHAT IS DOOM'S BEST PORT?
(the most simple, the most beautiful, and the most stable, please?)

There is no BEST port, but there are many GOOD ports.. It's a matter of oppinion on what you THINK is the best port.
Good for its editing features:
ZDoom (has very nice editing features)
Legacy (has very nice editing features, and good looks too)
Good for looks:
JDoom (it's very pretty)

That seems to be just about right. The new ZDoomGL will be around soon enough and then ZDoom should look really nice too. Jaakko is also rewriting huge chunks of JDoom again and plans to start closing the gap on editing features soon after.
Legacy is known for it's splitscreen deathmath (or co-op if you really want...). It's supposed to be getting a copmlete rewrite of the network code soon to make modem games fun again.
There's also Boomsday, which seems to be JDoom crossed with BooM. Always cool.
