If you want the MIDI's, why not just rip 'em out of the game, with utilities like MUS2MIDI, and various editors that'll take that data and save it as separate files?

You can use Wintex to extract the music from the games quite easily.
You can get Wintex in the Epidermis Emporium's Tools section.

I found loads of great music on the master levels disc with doom95. I've browsed the majority of the Maximum levels for Doom 1+2. That's over 1000 levels. (I really should get out more! http://forums.newdoom.com/ubb/smilies/cwm35.gif )
